I think this might actually be my Grandmother Pearl’s recipe that my Mom used to make for us.  It was one of my absolute favorite and still is.  Sometimes, I will use ground turkey, or I’ll buy a roasted chicken and cut it up and add that instead of the hamburger.  Leftover Thanksgiving turkey is also great in this recipe.

1 lb. lean hamburger
1 chopped onion
1 green pepper, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
1 can enchilada soup
½ cup milk
cornmeal tortillas
8 oz. cheese, (monterey jack, cheddar or colby)

Brown meat with onion, and drain fat.  Add soups, enchilada sauce, milk, and green pepper.  Mix and heat through. Put in a large (9 x 13″) casserole dish in layers: first, a meat layer, then tortillas, torn in quarters, then cheese, continuing, and finishing with cheese on top.  Bake at 350 for 1 hour, or until heated through with cheese melted.  Cover with foil and let set 5 – 10 minutes before serving.
