From the kitchen of Lillian Crease

1 egg
1/2 cup milk
2 slices of bread (heels are good)
1 medium chopped onion
2 lbs. hamburger
2 to 3 slices bacon
salt and pepper to taste

Beat egg, add milk, bread (torn into small pieces), and onion.  Add mixture to hamburger and mix well (with hands) with salt and pepper.  Put into loaf pan, rounding top; indenting some on sides.  Cut bacon to size; place over top and pour catsup over.  Cook at 350 for 1 – 1 1/2 hous, or until done in the middle.

At about 1 hour, take meatloaf from oven, pour off any accumulated fat.  Cut through middle of meatloaf to see if its done.  If not, bake another 1/2 hour.

Mom’s note:
For best meatloaf, use 1 lb. very lean hamburger, and 1 lb. of less expensive hamburger with fat.
