Mom LOVED her some jello salad.  This is another dish that I came to associate with special holiday meals.  She always served this with the dinner, as a “salad”, not as a dessert.   This was also the dish that she always took to family potlucks.  I carry on that tradition, and I take this to potlucks.  My friends laugh, because jello is sooo very retro, but their laughing while their stuffing their faces with it and asking for the recipe (same with the Cherry Fluff Jello).

2 small pkgs. orange jello
1 cup boiling water
3 cups 7-Up
1 small can crushed pineapple, drained
1/2 cup walnuts, chopped
1 small container Cool Whip

Dissolve jello in hot water, then add 7-Up.  Chill until partially set (the consistency of egg whites), then fold in Cool Whip, oranges, pineapple, and walnuts.  Chill until completely jelled.

Note: For a lower calorie dessert, substitute sugar free jello, club soda (instead of 7-Up) and fat-free Cool Whip.
